Roast Potatoes

A dinner favourite in our house. Potatoes are some of my favourite foods; whichever way they are prepared. Roast potatoes especially can be very satisfying and they don’t require much time to prepare. Here is my roast potatoes recipe.

Oil- 100ml
Potatoes- 0.5kg
Roasting pan
Dried Parsley


.Pre-heat oven to 200C/Fan 180C/gas mark 6

. Place the roasting pan in the oven for about 2 mins

.Peel your potatoes, cut them in to even-sized pieces.

.Put potatoes in salted water and wait for them to boil. Once the water starts boiling, let the potatoes cook uncovered for 3 mins.

.Meanwhile measure 100ml of oil into the roasting pan and put in the pre-heated oven for 2-3 minutes.

.Drain the potatoes in a colander and shake them to rough them up. Sprinkle 2tsp of plain flour, pepper and parsley on the potatoes and shake them again.

.Remove the roasting pan from the oven and carefully lower the potatoes into the hot oil. Take care not to over crowd your pan (Use two roasting pans if necessary).

.Roast the potatoes in the pre-heated oven for 15 mins.

While you wait for the potatoes to cook, you can steam some vegetables or prepare fresh salad to go with them.

.After 15 mins, remove the potatoes from the oven and turn them over. Let them roast for another 10-15 minutes.

.Remove from the oven and serve.

Roast potatoes go great with slow cooked Gammon stock and some vegetables.

.When turning over the potatoes at the 15 min mark, you may want to slowly sift them (take care not to over do it). I found this helps to add to the fluffiness of the potatoes.

. For the best potatoes, make sure the oil is really hot before putting the potatoes in.
